The base wine is stored in pressurised tanks. Through the addition of selected yeast at a controlled temperature the wine becomes lightly effervescent. Approximately three months later the filtered fizzy wine is bottled under ideal circumstances (isobaric). |

This strong wine has an intense, bright red colour with orange reflections. Furthermore you taste traces of blackberries, cherry and plum and overripe forest fruits. A strong taste, which is partly soft (through its high alcohol content) and partly complex. After the wine has ripened you taste traces of coffee beans (a little) and liquor. |
Description |
This wine comes from a carefully selected vineyard of over 50 years old which only produces 4,000 kilos per hectare. During two years the wine ripens in small oak barrels, so that each barrel is individually controlled for evolution. Before the wine is bottled, the purification is carried out through a traditional fashion: with a bit of egg white. This removes the bitter tannins, if they are still present. After another control, the wine’s completion is finally celebrated at the Scrimaglio winery with a real banquet. It is therefore not surprising that this wine carries a history of craftsmanship, style and tradition. |
